2005 Los Carneros Cabernet Sauvignon, Hyde Vineyard

2005 Los Carneros Cabernet Sauvignon, Hyde Vineyard

This 2005 Bonneau Wine debuts as our first “Super Premium” Cabernet Sauvignon. The grapes for this wine come exclusively from the impeccably farmed & highly acclaimed vineyards of Larry Hyde* in the Los Carneros appellation. The wine is sophisticated and very elegant. A sumptuous bouquet of ripe black fruits greets the nose. Tastes of juicy blackberries, bing cherries & huckleberries succulently fill the palate. Smooth, finely integrated tannins, derived from almost two years of careful aging in the highest quality French oak barrels, bind the wine together deliciously. Hints of vanilla, mocha, licorice and spices lead to a lingering and extremely satisfying finish.

This wine is so finely made that it can be a joy to drink now, but it will only get better with careful cellar aging. Only a little over 100 cases were vinted, so availability will be very limited and wine aficionados will want to reserve this wine for their most special occasions.

This is an interesting and different wine. It’s much lower in alcohol than most Cabs, but completely dry, with a tobacco and sage pull to the black currant flavors. The firm tannins suggest cellar possibilities.
